A build can be either for Role-Play, Flavour, Optimization or even experimentation. A full class BladeLock can be very strong. But perhaps not as strong as a Multiclass one. For example 2 levels of Paladin is Massive for a bladelock the same way a 1 (3 in bg3) level dip in Hexblade (pact of the blade in bg3) is a game changer for Paladin.

If you're not playing on Honor then you definitively want 5 in both Pally and Bladelock, so it could be 7/5 or 5/5 with 2 in Sorc or Fighter. For Sorc you probably want at least 2 for Twinned Spell. You can take pact of the blade to use a great sword but then you can’t take pact of the chain which would get you the find familiar spell. Eldritch knight is the better of the two options for what you want. Personally, I’d suggest a ranger.

Hex applies to all attacks. Dual wielding adds an extra attack so it's a pretty significant increase. You are entitled to your opinion, but most of the time dual-weilding or two handed weapons, on average, deal more damage.
